Do I have to use their shop to fix my car?

A: No, you can use any body shop to fix your car that you want.  My office normally recommends that if you know a body shop that you trust, use them.  Have the insurance company talk to them after they do an estimate.  This way the shop can ensure that they will be paid for all of the repairs they complete.  It is best if the shop is paid directly.  This simplifies the process and makes it less likely that you will be stuck with some bill.
